Enfoque de la identidad gastronómica en las fiestas del Yamor y San Juan en la ciudad de Otavalo

Abstract
Las fiestas de San Juan y del Yamor en Otavalo, ubicada en el Geoparque Imbabura, Ecuador, desempeñan un papel fundamental en la gastronomía y la cultura culinaria local. Estas celebraciones de Otavalo están intrínsecamente relacionadas con la gastronomía local y la cultura culinaria de esta ciudad que resalta con sus recetas como la chicha del Yamor, el champús, la fritada, el cuy asado, distintos tipos de empanadas y productos como granos en especial el maíz. Este estudio tiene como objetivo general estudiar y promover la cultura gastronómica y festiva de la ciudad de Otavalo, mediante la investigación y documentación de la importancia de las festividades del Yamor y San Juan, así como una compilación de recetas que preserve y difunda los platos tradicionales vinculados a estas celebraciones. Para lograr estos objetivos, se partió de una investigación básica con enfoque mixto. Los datos cuantitativos se recopilaron mediante encuestas a la comunidad local representadas en 166 personas, mientras que los cualitativos se obtuvieron a través de cinco entrevistas semiestructuradas con expertos en gastronomía y miembros de la comunidad. Los resultados se evidencian en una compilación de doce preparaciones de la cocina representativa de Otavalo presentadas en un recetario de nombre “Sabores de Fiesta: Recetas del Yamor y San Juan en Otavalo”. Se concluye que las festividades de San Juan y Yamor son cruciales para la transmisión intergeneracional de la cultura culinaria de Otavalo.
The San Juan and Yamor festivals in Otavalo, located in the Imbabura Geopark, Ecuador, play a fundamental role in local gastronomy and culinary culture. These celebrations in Otavalo are intrinsically related to the local gastronomy and culinary culture of this city, highlighted by its recipes such as Yamor chicha, champús, fritada, roasted guinea pig, various types of empanadas, and products like grains, especially corn. The general objective of this study is to research and promote the gastronomic and festive culture of the city of Otavalo by investigating and documenting the importance of the Yamor and San Juan festivals, as well as compiling recipes to preserve and disseminate the traditional dishes linked to these celebrations. To achieve these objectives, a basic mixed-methods research approach was employed. Quantitative data were collected through surveys of the local community, represented by 166 people, while qualitative data were obtained through five semi-structured interviews with gastronomy experts and community members. The results are evidenced in a compilation of twelve representative Otavalo dishes presented in a recipe book titled Festival Flavors: Recipes from Yamor and San Juan in Otavalo.” It is concluded that the San Juan and Yamor festivities are crucial for the intergenerational transmission of Otavalo's culinary culture.
