Abstract
Brindar confianza al consumidor al momento de ingerir alimentos en la industria gastronómica es importante, un campo notorio son las buenas prácticas de manufactura y el proceso en el cual se deben ejecutar, de tal manera que contribuya a asegurar el bienestar de quien consuma tilapia, teniendo conciencia de lo ya mencionado se procedió a la realización del manual mediante la compilación de múltiples fuentes de información también se identificó los materiales y métodos empleados para la obtención de datos representativos que aporten a la investigación.
