Abstract
La ciudad de San Gabriel, reconocida como pueblo mágico en 2019, cuenta con numerosos atractivos turísticos como la cascada de Paluz, el milenario bosque de los arrayanes y la laguna del Salado. Además, posee una rica gastronomía tradicional, a menudo desconocida. El objetivo de esta investigación es desarrollar una propuesta integral para la implementación de un museo gastronómico en San Gabriel, provincia del Carchi, que promueva la preservación, difusión y valoración de la cultura culinaria local. La metodología se basa en técnicas documentales, encuestas, entrevistas y observación. Se recibieron 204 respuestas a las encuestas, aunque la muestra determinada fue de 167. Se realizaron cuatro entrevistas a funcionarios municipales, administradores de museos y un docente universitario. Los resultados más representativos incluyen un perfil del cliente potencial del museo, un inventario de 34 platos tradicionales que representan el acervo cultural gastronómico de San Gabriel, la permanencia de 10 técnicas tradicionales de cocción y el uso de varios utensilios prehispánicos y de la época colonial. Se concluye que un museo gastronómico es esencial para conservar y divulgar el patrimonio culinario de la región. Al celebrar la historia, las tradiciones y las técnicas locales, estos museos educan al público y fomentan la apreciación de la cultura alimentaria y su conexión con la historia, la sociedad y el medio ambiente.
The city of San Gabriel, recognized as a magical town in 2019, boasts numerous tourist attractions such as the Paluz waterfall, the ancient Arrayanes forest, and the Salado lagoon. Additionally, it has a rich traditional gastronomy, often unknown. The objective of this research is to develop a comprehensive proposal for the implementation of a gastronomic museum in San Gabriel, Carchi province, which promotes the preservation, dissemination, and appreciation of local culinary culture. The methodology is based on documentary techniques, surveys, interviews, and observation. A total of 204 survey responses were received, although the determined sample was 167. Four interviews were conducted with municipal officials, museum administrators, and a university professor. The most representative results include a profile of the potential museum visitor, an inventory of 34 traditional dishes representing the gastronomic cultural heritage of San Gabriel, the continuity of 10 traditional cooking techniques, and the use of various pre-Hispanic and colonial-era utensils. It is concluded that a gastronomic museum is essential for preserving and disseminating the culinary heritage of the region. By celebrating the history, traditions, and local techniques, these museums educate the public and foster an appreciation of food culture and its connection to history, society, and the environment.
