Abstract
La investigación se centra en implementar y promover la identidad gastronómica de Manabí en la Hostería Rancho Manabita, subrayando la autenticidad y la tradición en todos los aspectos del negocio para ofrecer una experiencia única. El análisis internacional destaca la necesidad de consistencia en el concepto de un restaurante, mientras que a nivel nacional se resalta la importancia de las raíces culturales de la gastronomía ecuatoriana, especialmente la manabita. Localmente, la evolución de la Hostería Rancho Manabita refleja su dedicación a la cocina tradicional a pesar de desafíos financieros y falta de formación técnica, apoyada por un marco legal que protege el patrimonio cultural. La metodología aplicada consistió en una investigación con enfoques cualitativos y cuantitativos, se elaboraron 160 encuestas dirigidas a clientes y 5 entrevistas a expertos locales. Como principales resultados se evidencia la alta satisfacción de los clientes con la autenticidad y uso de ingredientes locales. La discusión enfatiza la consistencia del concepto, la calidad del servicio y la conexión entre gastronomía y cultura local. La propuesta incluye renovar el menú con platos endémicos, crear una cocina especializada y tematizar el restaurante para ofrecer una experiencia cultural enriquecedora, garantizando la autenticidad y calidad de los platillos servidos.
The research focuses on implementing and promoting the gastronomic identity of Manabí at Hostería Rancho Manabita, emphasizing authenticity and tradition in all aspects of the business to offer a unique experience. International analysis highlights the need for consistency in a restaurant's concept, while nationally, the importance of the cultural roots of Ecuadorian cuisine, especially that of Manabí, is emphasized. Locally, the evolution of Hostería Rancho Manabita reflects its dedication to traditional cooking despite financial challenges and lack of technical training, supported by a legal framework that protects cultural heritage. The applied methodology consisted of qualitative and quantitative research, with 250 surveys directed at customers and interviews with local experts. The main results show high customer satisfaction with authenticity and the use of local ingredients. The discussion emphasizes concept consistency, service quality, and the connection between gastronomy and local culture. The proposal includes renewing the menu with endemic dishes, creating a specialized kitchen, and theming the restaurant to offer a culturally enriching experience, ensuring the authenticity and quality of the dishes served.
