Propuesta de desarrollo de un suplemento nutricional en polvo para deportistas en fisicoculturismo a base de doce productos autóctonos del Ecuador

Abstract
El Ecuador tiene una gran biodiversidad alimenticia, en la cual se encuentra una gran cantidad de productos autóctonos que contienen un alto porcentaje de nutrientes, la cual pueden ser esenciales para el desarrollo del consumidor, complementado su nutrición. A esto lo definimos como superalimentos. Esta investigación plantea como objetivo general: Proponer el desarrollo de un suplemento nutricional en polvo para deportistas en fisicoculturismo a base de doce productos autóctonos del Ecuador. En la cual la metodología en este estudio trata acerca de una investigación básica con el enfoque mixto, de igual manera la presente indagación contribuye cuatro tipos de investigación: documental, explicativa, descriptiva, preexperimental. También se aplicó dos instrumentos: la ficha o tabla de recopilación de información de los productos autóctonos del Ecuador; La entrevista con 5 preguntas de carácter abierto hacia los 6 profesionales con conocimiento en desarrollo de suplementos nutricionales enfocados al deporte; compartiendo de la misma manera cuatro métodos: deductivo, inductivo, histórico, analítico – sintético. Como resultado se seleccionó 23 productos autóctonos considerados de alto valor nutricional, través de la recopilación y el análisis de la información previamente publicada en diferentes estudios encontrados en pdf, libros, revistas, páginas web, tesis. Las recomendaciones recopiladas por los entrevistados, tomaron en cuenta 12 productos, por la asimilación de nutrientes durante el consumo y la facilidad de obtención durante todas las temporadas del año, así mismo los diferentes procesos para el desarrollo del suplemento. Se concluye que cada fase de desarrollo ha sido de forma natural y artesanal.

The general objective of this research is: To propose the development of a powdered nutritional supplement for athletes in bodybuilding based on twelve indigenous products from Ecuador. In which the methodology in this study deals with basic research with the mixed approach, in the same way the present inquiry contributes four types of research: documentary, explanatory, descriptive, pre-experimental. Two instruments were also applied: the file or table of information compilation of the native products of Ecuador; The interview with 5 open questions towards the 6 professionals with knowledge in the development of nutritional supplements focused on sports; sharing in the same way four methods: deductive, inductive, historical, analytical - synthetic. As a result, 23 indigenous products considered of high nutritional value were selected, through the collection and analysis of information previously published in different studies found in pdf, books, magazines, web pages, theses. The recommendations compiled by the interviewees took into account 12 products, due to the assimilation of nutrients during consumption and the ease of obtaining them during all seasons of the year, as well as the different processes for the development of the supplement. It is concluded that each phase of development has been in a natural and artisanal way.
