Abstract
Este proyecto de investigación tiene como objetivo crear un manual de técnicas tradicionales de envueltos ecuatorianos, con la finalidad de preservar los valiosos conocimientos culinarios que se ha transmitido por generaciones. La investigación se desarrolla con enfoque mixto en base al análisis de contenido de 9 recetas tradicionales ecuatorianas. Además, se llevó a cabo 6 entrevistas a Cocineras tradicionales y Expertos Gastrónomos, con la finalidad documentar los saberes empíricos y tener una visión auténtica y detallada de las técnicas culinarias. Los resultados de las encuestas y entrevistas, revelaron que el 99% de los encuestados ha consumido envueltos de sal o dulces; en su mayoría se encuentra entre rango de edad de 20 a 30 años. Además, se destaca que el 51% los consumo rara vez y es evidente el poco conocimiento sobre la elaboración correcta de los envueltos con el 62%. Los chefs ecuatorianos reconocen que los envueltos no necesitan innovación porque de por sí, tienen una presentación única que deberían estar presente en restaurantes gourmet; siendo importante potenciar su consumo y elaboración. En conclusión, esta investigación que los envueltos ecuatorianos son símbolos vivos de la identidad culinaria del país y deben ser protegidos como un valioso patrimonio intangible. Para garantizar su preservación, es imperativo documentar los conocimientos empíricos de las cocineras ecuatorianas, quienes son las guardias del saber ancestral que ha sido transmitido de generación en generación. Esto causará un impacto positivo a los futuros gastrónomos para garantizar la preservación de los saberes culinarios tradicionales y fomentar su elaboración para aumentar su consumo.
The objective of this research project is to create a manual of traditional Ecuadorian wrapping techniques in order to preserve the valuable culinary knowledge that has been passed down through generations. The research is developed with a mixed approach based on the content analysis of 9 traditional Ecuadorian recipes. In addition, 6 interviews were conducted with traditional cooks and expert gourmets in order to document the empirical knowledge and to have an authentic and detailed vision of the culinary techniques. The results of the surveys and interviews revealed that 99% of the respondents have consumed salt wraps or sweets; most of them are between 20 and 30 years old. In addition, 51% have consumed them rarely and it is evident that 62% have little knowledge about the correct preparation of the wraps. Ecuadorian chefs recognize that wraps do not need innovation because they have a unique presentation that should be present in gourmet restaurants; it is important to promote their consumption and preparation. In conclusion, this research shows that Ecuadorian wraps are living symbols of the country's culinary identity and should be protected as a valuable intangible heritage. To guarantee their preservation, it is imperative to document the empirical knowledge of Ecuadorian cooks, who are the guardians of the ancestral knowledge that has been transmitted from generation to generation. This will have a positive impact on future gastronomes to guarantee the preservation of traditional culinary knowledge and encourage its elaboration to increase its consumption.
