Abstract
La presente investigación aborda en el fascinante mundo de la gastronomía monástica centrándose en el Monasterio Santa Clara de la Gruta de la Paz - Ecuador. El objetivo de esta investigación es elaboración de un catálogo digital mediante las preparaciones gastronómicas elaboradas en el Monasterio Santa Clara de la Gruta de la Paz. La falta de conocimiento en cuanto a la gastronomía monástica hace que esta importante cocina pase desapercibida. Este trabajo se torna importante porque busca documentar y preservar las tradiciones culinarias arraigadas en este espacio sagrado, se analizan las recetas, técnicas culinarias y la conexión entre la espiritualidad y la vida comunitaria de las monjas de dicho convento. La metodología desarrollada inicia con una investigación básica con enfoque mixto. Se aplicaron 23 encuestas y 5 entrevistas a través de un muestreo no probabilístico por conveniencia. Los hallazgos son la caracterización de doce platos de la cocina monástica, reflejados en un catálogo digital que constituye un valioso recurso que captura la esencia de la gastronomía monástica y contribuye a su difusión y reconocimiento. Se concluye que la cocina monástica encierra un cúmulo de conocimientos inexplorados que sería prudente investigar, puesto que de allí nace el rasgo de cocina barroca que permanece en la cocina tradicional ecuatoriana.
The present investigation immerses itself in the fascinating world of monastic gastronomy, focusing on the Monastery of Santa Clara de la Gruta de la Paz - Ecuador. The objective of this research is to create a digital catalog using the gastronomic preparations made in the Monastery of Santa Clara de la Gruta de la Paz. The lack of knowledge regarding monastic gastronomy means that this interesting cuisine goes unnoticed. This work becomes important because it seeks to document and preserve the culinary traditions rooted in this sacred space, the recipes, culinary techniques and the connection between spirituality and the community life of the nuns are analyzed. The developed methodology begins with basic research with a mixed approach. 23 surveys and 5 interviews were applied through non-probable convenience sampling. The findings are the characterization of twelve dishes of monastic cuisine, reflected in a digital catalogue that constitutes a valuable resource that captures the essence of monastic gastronomy and contributes to its dissemination and recognition. It is concluded that monastic cuisine contains a wealth of unexplored knowledge that it would be prudent to investigate, since this is where the characteristic of baroque cuisine that remains in traditional Ecuadorian cuisine is born.
