Echeverría Almeida, Juan CarlosPantoja Navarrete, Joffre Steven27/11/202427/11/20242023https://repositorio.puce.edu.ec/handle/123456789/44852La presente investigación tiene como objeto de estudio a la gastronomía de la ciudad San Gabriel de Montufar, de la provincia del Carchi, Ecuador, consistente con la identidad cultural y tradiciones que singularizan al lugar, y que son atributos de la diversidad característica del Ecuador que lo destaca a nivel mundial conforme a la pluriculturalidad atributo del Estado modelo establecido en la normativa constitucional, teniendo como objetivo general, la revalorización y resalte de la gastronomía de la ciudad de San Gabriel de Montúfar, mediante un minucioso análisis de recetas gastronómicas tradicionales, se pretende realzar la singularidad y autenticidad de los platos característicos de la región. Se emplea para ello la metodología de acuerdo con la modalidad mixta cualitativa y cuantitativa, empleando como nivel de profundidad basado en un estudio descriptivo; así mismo se utilizan los métodos inductivo, deductivo, analítico y sintético; como técnicas la encuesta, entrevista y catalogo digital, aplicado a base de instrumentos como cuestionario y guía de entrevista, la aplicación de estos recursos y su utilidad se direccionan sus resultados a dar atención y respuesta a la interrogante que constituye la base de la presente investigación. En relación con los resultados obtenidos se tienen los indicadores y aportes críticos que atribuyen la verificación de la idea objeto de investigación y la necesidad y factibilidad de la propuesta de revalorización gastronómica de la ciudad de San Gabriel, presentados a través de un catálogo los principales platos típicos que posee la ciudad, los sabores singulares y característicos, así como su preparación, de tal manera que se contribuye con el rescate y preservación del legado culinario local, fortaleciendo la identidad cultural y el posicionamiento turístico a nivel nacional y mundial.The object of this research is the gastronomy of the city of San Gabriel de Montúfar, in the province of Carchi, Ecuador, consistent with the cultural identity and traditions that make the place unique, and that are attributes of the characteristic diversity of Ecuador that It stands out worldwide in accordance with the multiculturalism attribute of the model State established in the constitutional regulations, having as a general objective, the revaluation and highlight of the gastronomy of the city of San Gabriel de Montúfar, through a meticulous analysis of traditional gastronomic recipes, it is aim to enhance the uniqueness and authenticity of the characteristic dishes of the region.
